Low Carb Peanut Butter Balls
Having something low carb in the refrigerator to curb those hangry moments or sweet cravings is a must. These Keto Chocolate Peanut Butter Balls can be made once a week and kept in the fridge for snacking or desserts.
Best part is that these Peanut Butter Balls take just 3 ingredients and 5 minutes to make!
Ingredients Needed For Low Carb Chocolate Peanut Butter Balls (screenshot for grocery list)
- Natural (no-sugar) Peanut Butter
- Unsweetened Cocoa Powder
- Powdered Monkfruit Sweetener
- Sea Salt
Can You Use A Different Sweetener
Yes. I prefer Lakanto Powdered Monkfruit Sweetener. This makes really thick peanut butter balls that stay together and stick to your mouth.
I have also used the granulated monk fruit sweetener too. That will make slightly softer peanut butter balls.
Or, use stevia sweeteners if you prefer.
What Type Of Peanut Butter To Use
I use Justins Peanut Butter. Any no-sugar natural peanut butter will work. Just make sure the oils are completely mixed in so that the peanut butter balls will stick together.
How To Make Chocolate Peanut Butter Balls
- Mix all ingredients with hand mixer for 1 minute or until mixture comes together.
- Refrigerate mixture 5-10 minutes.
- Roll into 8-10 balls and transfer to a baking sheet lined with parchment paper. Freeze for 30 minutes.
- Re-roll balls then transfer to an airtight container.
- Store in refrigerator.
