This fresh and flavorful salad comes together super quick and goes well with just about any dish. We are keeping this recipe simple but you can add more if preferred. Thinly sliced red onions and avocado go wonderfully in this salad.

- Vine Tomatoes
- Olive Oil
- White Wine Vinegar or White Balsamic Vinegar
- Garlic
- Dried Italian Season
- Fresh Parsley
- Salt/Pepper
How To Make Low Carb Tomato Cucumber Salad
- Combine cucumbers and tomatoes in large mixing bowl.
- Whisk together oil, vinegar, garlic, Italian seasoning and parsley.
- Toss cucumbers and tomatoes with dressing. Salt and pepper to taste. Serve cold.
